Chocolate Bliss Truffles

With the holidays in full swing, soon you’ll be deciding what to make for your friend’s annual cookie exchange party, the neighbor’s holiday open house or the end of the year office party. Well look no further. These are the most decadent, mind-blowing, make you giddy with endorphins, heaven on earth, chocolate coconut truffles I have ever tasted! And trust me, I’ve had my share of chocolate.

We love the traditional holiday treats as much as the next person, but what we don’t love is the nasty sugar crash, hangover and the compromised immune system that they leave us with.

These truffles are guilt-free without the crash. The raw cacao will give you energy and antioxidants. And the coconut will give you a good dose of  healthy fatty acids. Did you also know that coconut oil has been proven to improve heart health and thyroid function? It also supports your immune system, boosts the metabolism, and can promote weight loss. Now that is a dessert you can feel good about!

Chocolate Bliss Truffles

Yield: About 30 truffles

Ingredients:

Directions:
In a high-speed blender, blend the warmed coconut oil, salt, vanilla extract and maple syrup. Add the shredded coconut slowly and blend until smooth.

Pour the mixture to a large mixing bowl. Slowly stir in cacao powder and mix by hand until thoroughly combined. Watch for chunks of chocolate and combine well. Place the bowl in the refrigerator for about 15 to 20 minutes to harden the mixture slightly.

Spoon heaping tablespoons of the mixture and roll into small balls. If the mixture sticks to your hands and you aren’t able to roll it easily, put it back into the refrigerator for a little longer to achieve the right consistency.

Sprinkle finished truffles with a pinch of Himalayan crystal salt and store in an air-tight container in the refrigerator.

      No but they are great for transition week to help ease off of sweets. No stimulants on the cleanse. :)
