We’ve also been on a comfort food kick lately, cooking up our favorite healthy comfort food recipes and we wanted to share some of our go-to recipes with our community.

While quarantine and practicing social distancing right now, we’re all low on hugs so consider these recipes a “food hug” from us to you!

You could easily substitute sweet potatoes or regular potatoes if you don’t have parsnips, and feel free to use whatever dark leafy greens you have on hand. If you’re vegan or vegetarian, you can substitute cooked chickpeas for the turkey.
Sweet ‘n’ Spicy Pull-Apart Chicken (with Instant Pot instructions)
This is one of our all-time cleanser favorites for a reason – it’s AH-mazing. It’s a tasty BBQ-esque pull-apart chicken you can serve as the filling for a sandwich or taco – basically the ultimate comfort food. We’ve got instructions for cooking in either a conventional slow cooker or an Instant Pot.
This comforting curry is delicious over rice, cauliflower rice, or fresh greens. Swap out the chickpeas for any canned beans you have on hand, or even pre-cooked chicken for a meat-lover’s version.
We know many of you have probably stocked up on beans, so these spicy burgers are the perfect way to switch it up. Enjoy as is or with a lettuce wrap or bun and all your favorite burger fixings.
