Valentine’s Day Raw Blueberry Pie

Valentine’s Day is right around the corner so today I thought I would share with you one of my favorite raw desserts (close tie between this one and our Decadent Raw Brownies).

rawblueberrypie1Raw Blueberry Pie is the perfect treat to make for yourself and the ones you love. To me there is no better way to express our love and appreciation than with healthy, nutritious food!

For many reasons, February is a favorite time of year for me. It’s a time of celebration and reflection because it happens to also be my birthday month. But even more than that, is that it’s also the month that my hubbie, best friend, dad, sister, late grandma (whom I actually shared a birthday with for 27 years!), and my dear friend and business partner, Jo, also celebrate birthdays.

Birthdays, like Valentine’s Day, are a good excuse to show people how grateful you are that they are at part of your life.

It seems like Valentine’s Day sometimes gets a bad wrap for being a “Hallmark holiday,” but I wholehearted disagree. Like birthdays, Valentine’s Day is a time to celebrate LOVE – and I’m not talking just about romantic love.

Perhaps the most important love to talk about is Self-love. I think this quote by best-selling author Brené Brown sums it up perfectly.

“Love is not something we give or get; it is something that we nurture and grow, a connection that can only be cultivated between two people when it exists within each one of them – we can only love others as much as we love ourselves.”

Sending you love, appreciation, and the compassion you need to cultivate more Self-love in your life. May your heart always remain open and true.

Raw Blueberry Pie

Yield: 1 pie

Ingredients:

  • 1 cup raw walnuts
  • 1/2 cup dates, pitted
  • 1 tsp. vanilla extract
  • 1/2 tsp. ground cinnamon
  • Pinch sea salt
  • 4 cups organic fresh blueberries
  • 1 TB. honey

Directions:
In a food processor fitted with an S blade, combine raw walnuts, dates, vanilla extract, cinnamon, and sea salt until smooth. Press mixture evenly into a pie dish, and refrigerate for about 1 hour or until crust is hard.

Meanwhile, in the food processor fitted with an S blade, combine blueberries and honey. Pour into chilled crust, and refrigerate for at least 2 hours before serving.

    Followed the recipe except for the heart pie pan( by the way where is it from?) The taste is
    awesome but the consistency was a bit runny.

      Hi Tracey, I got the pie pan from Sur La Table (love that store!). Did you refrigerate after you made? We’re you using frozen blueberries? If so, you need to thaw first then pour off any excess juice. Hope that helps.

      Yes! Just thaw them first and if there is a lot of liquid leftover, pour that off before adding to mixture.

    Made the raw blueberry pie a for Valentine’s Day (while cleansing), and it was amazing!! I had to substitute the walnuts for cashews due to a sensitivity I have to walnuts and pecans, and it worked just fine.

    I recently made the Decadent Raw Brownies (post-cleanse) and I don’t think those lasted a full 24 hours in my house! My husband said they were the BEST treat I have made since taking on the Conscious Cleanse lifestyle. Thanks for the yummy recipes! I look forward to whatever come next!
