Leprechaun Juice

To the proud Irish men and women out there and the diehard St. Patty’s Day Guinness guzzlers. please don’t get mad at me for sayin’ it – I’ve never been Shamrock Girlmuch of a fan of St. Patrick’s Day.

Perhaps the time I spent slingin’ corn beef and cabbage at the Dublin Pub back in high school ruined me. I can still smell the stench – a nauseating blend of cabbage farts, whiskey and sweat. Gross! And call me crazy, but I’ve never had the endurance, nor the stomach for 12 hours of beer drinking either.

These days though, I have a new appreciation for the traditions that surround the luck o’ the Irish. Green eggs, green beer, green smoothie?!?

Ever since the green smoothie revolution started, drinking green goodness gives us a reason to feel lucky every single day! So maybe this year, trade in the Irish Soda Bread and the Black and Tan, the stinky gas and the hangover. And instead raise your green smoothie in celebration of love, luck and the leprechauns.

Leprechaun Juice

Yield: 1 quart

Ingredients:

  • 2 cups water
  • 2 cups dark leafy greens blend of choice (kale, spinach, romaine)
  • Large handful cilantro
  • 1 banana
  • 1/2 cup frozen mango
  • 1 stalk celery
  • 1/2 lime, peeled

Directions:

In a high speed blender, add water, greens, cilantro, banana, mango, celery and lime. Blend on high until smooth. Serve and enjoy!

    I’m with guys! As with many American celebrations of a holiday, St. Party’s day has fallen into the category of too much drinking and not enough focus on what the original celebration was about. Many people out there celebrating aren’t Catholics- which is what the day is about (St. Patrick coming to Ireland and bringing Christianity. My hubby is born and raised in Dublin and calls this day “rent a paddy day”, because everyone wants to know a real Irishman- so funny. He hates the green beer in plastic cups and the loud “lager mouths”. Our tradition is to go out for breakfast at Connor O’Neil’s, he gets an Irish breakfast (ooog, not for me). The evening is spent at home, maybe with a friend, probably watching a movie. this year ive been looking into vegan versions of Irish traditional meals. Green smoothie is definitely part of my plan for the day. It now every day since doing your Conscious Cleanse in Jan! Thanks!
